Vanilla Cupcakes and Fluffy Brown Sugar Icing

Sorry that it’s been so long for me to post here. Things happen, and I get busy. I made these cupcakes for May birthdays. I love this recipe, it makes very good cupcakes.

 

The icing recipe was also amazing. I wanted something different. It was very labor intensive, but not hard. If you follow the directions, it’s fine. I think it tasted like caramel flavored marshmallow.

Strawberry cake

This cake was really good. I had a few struggles with it, but it did end up tasting really good. The recipe I used called for cream cheese frosting, but I don’t like cream cheese, so I just made a basic buttercream, like the one from the oreo cupcakes recipe, without the oreos. I also made a strawberry filling for it, which is what caused most of the problems.

Tips: When using a filling, take some of the icing and make a wall around the edges so that the filling doesn’t come out. Also, make sure that the icing is think enough to hold up when the filling tries to come out the sides. Also, make sure your ingredients are room temperature. Especially if you use butter in the icing.

Donut Holes

I made these for Donut Day. I was going to just pick up some from Kroger, but then I decided to be an overachiever and make my own. Because I’m insane. They were really easy to make, they just took forever to fry because my deep fryer is tiny, and could only do 3 at a time.

I made another batch today, only I added cinnamon to the batter, and cocoa powder to the glaze. I was feeling creative. If you make them, just allow enough time to get them all fried and glazed. It takes longer than you’d think.

Peanut Butter Eyeballs

These are always a hit. They’ve been my favorite Halloween party food since we started having Halloween parties when I was a kid. We had the best Halloween parties. I had to fight pretty hard to get off work to go to the party this year, but I made these to take with me. I found a recipe that used Butterfingers in it. I was intrigued, so I decided to make them instead of the plain ones. They were amazing.

I like to make things to bring in on holidays, to lighten the mood that we have to work on a holiday. I didn’t use raisinets when I brought them to work, I just used chocolate chips for the pupils. I did use them for the ones I took to my mom’s house, and they’re awesome either way. I just wasn’t sure if everyone liked raisins. I love them, personally, but not everyone does.

Chocolate fudge

I made this fudge because I wasn’t sure if I made enough blondies for last Saturday. It seemed super easy, and a good way to bring in some more chocolate. Also a way to use up the last of the M&Ms from the blondies. I didn’t want them hanging around waiting for me to eat them. The recipe turned out okay, I just wish that I had used regular milk instead of almond milk. I buy almond milk because it lasts longer, and it doesn’t upset my stomach like regular milk can. So if you’re going to use a different kind of milk, I’d recommend reducing it some. It still tasted good though. I just had to keep it in the fridge because it didn’t set up at room temperature.

Blondies with Mini M&Ms and Oreos

I made these for a coworker’s last day. I finally used my coupon for a free bag of M&Ms and found a recipe for them. I saw a few recipes for M&M blondies, but I was hesitant to make them because my coworker really loves chocolate, and I didn’t think they had enough chocolate in them. This recipe used chopped up oreos. I love oreos, so these won out. They turned out really well. I had to bake them a little longer than it said, because my tester toothpick didn’t come out clean. It is an important thing to do, but I bet they would have been fine if they were a little underdone.

Mini M&M Cookie Dough Truffles

I haven’t posted much lately, I’ve been busy. I’ve had a lot going on with school and work. I made these because I had a coupon for a free bag of M&Ms. I went to the store and got them, but I forgot to use my coupon. That’s beside the point. The point is that I had a bag of Mini M&Ms to use. I did a search for recipes that use mini M&Ms, and found this. It took a while to make the chocolate chips I was melting didn’t cooperate with me. It did lead to me making the decision to buy a chocolate melting pot. It should be beneficial for things like this in the future. They were really good. I would definitely make them again.

Although they said the recipe came from a book called the Cookie Dough Lovers Cookbook. Sounds like something I should look into.

Brookies

These are awesome. I first had them at Pam Pam’s Cupcake shop in Brunswick, GA. It was a brownie cupcake with chocolate chip cookie on top. Then I was at Wal-Mart looking for discounted baked goods. They had some too. Theirs were bars, like normal brownies, not cupcakes.

I had been craving something like this for a while now, and it gave me a chance to use up some more of my leftover chocolate chips from when I bought way too many  for the cake pops. (See Red Velvet Cookies for that story)

I was a little disappointed when I realized that, after staying up late Tuesday night to make these, I left them at home when I left for my shift on Wednesday. But I left the container closed, they’ll be fine for Friday’s shift. I made these in my new mini muffin pans. I used the recipe as is, and made about 80 brownies with cookie on top, and the remaining cookie dough made about 16 cups with no brownie. I baked them for 15 minutes, which was pretty much perfect.

Blueberry Muffins

I made these for a few reasons. One was that I had some blueberries from my grandparents’ garden, and I didn’t want them to go bad before I could eat them. Also, I wanted to make something that wasn’t dessert for a change. I had been asked previously to make blueberry muffins, so I figured that I had found my chance.

I made a double batch, to make sure that everyone got one. I heard some people say they ate 2, 3, even 6. Crazy. I didn’t have enough home grown blueberries to make both batches, so I used half frozen. The problem with frozen blueberries is that if you’re not careful, the batter will turn blue. It usually turns blue no matter what.

“Red” Velvet Cookies

I made these cookies for ‘Cookie Day’ that they did at work. Not many of us participated, but that’s okay. I wanted to do something with chocolate chips, since I bought a ton of them for the cake pops, and didn’t even use half of what I bought. I didn’t want to make just regular chocolate chip cookies, so I found these. My only problem with this recipe was that when I put the chocolate chips on top, I burned my arm twice. And they didn’t really cool enough before I put them in a box. But that was my fault.

Also, I put the word ‘red’ in quotes because I didn’t really have much red food color, so they weren’t very red.
